I first started cooking at the tender young age of 12, when a friend of the family bought me a microwave cookbook for my birthday. I haven't looked back since! Fresh Pineapple Upside Down Cake

Needed something in a pinch this was a good basic recipe and it baked beautifully. I didn't have any fresh so I used canned pineapple rings.

Dump Bars

6, 7, 8 stars? I wish I could give it more! Delicious brownie, easy and so quick to make. I couldn't stand the idea of putting a full cup of oil so I did half canola oil and half apple sauce and it is just FANTASTIC!!

Downeast Maine Pumpkin Bread

I'm quite sure that I messed up SOMETHING in the ingredients - I believe I put too little nutmeg - but even then those breads turned out simply marvelous. The best thing about this recipe is that it's very quick and easy, the only "special" ingredient is the pumpkin puree (all other ingredients are very common), and it makes THREE loaves!! As for the taste, it's sweet to perfection & the ginger flavor is the cherry on top of the icing. I'm definitely gonna make this again!
