Ultimate Shrimp Scampi

YUM! This is the best shrimp scampi I've made in a long time. I was pleasantly surprised at the addition of fresh avocado to this dish. I had to add fresh tomato...can't have shrimp scampi without it! It (the avocado and tomato combo) definitely compliments the shrimp in a unique way. I only made a few other changes (without changing the flavor of the dish too much). I'm not a cheese person, so I left it out (husband didn't know it belonged in the recipe so he didn't miss it). I used dried parsley instead of fresh because that's what I had on hand. I subsituted half the butter for half a cup of olive oil so it wouldn't be as 'heavy' on the stomach and also added chicken broth in small increments as the onion and garlic simmered. I definitely cooked the 'sauce' for a while before adding the shrimp toward the end of cooking time. I agree with others in that you don't to taste the lemon juice and wine in this dish. You want all the flavors to come together. I didn't have angel hair pasta, so I just served the shrimp over a very small portion of regular spaghetti and added steamed asparagus to the side. I know people get mad when a cook rates the recipe after making changes, but this recipe (no matter how you do it) is five stars all the way!

The addition of vanilla made these the best ever. I also melted some almond bark to drizzle on top. My husband and I devoured these!!

Soft Chocolate Chip Cookies II

Just took a batch out of the oven and they're great. I followed the recipe exactly then added pecans toward the end. My kids love them. Can't wait for my hubby to try them when he gets home. This will be my go-to recipe for chocolate chip cookies now. The cookies are crisp on the outside yet soft and chewy in the center. Perfect!

Chicken Potato Bake

This is very tasty without all the hassle. Prep time is very quick. I took the advice from others and microwaved my potato to soften them slightly. The only thing I added in addition to what the recipe called for was alittle garlic salt. I CAN NOT REMEMBER THE LAST TIME WE DID NOT HAVE LEFT OVERS! I will definately make again.

The Best Vegetarian Chili in the World

Very good. I wish I had all the ingredients on hand, but despite this, the chili came out great. What I was missing: green pepper, fresh jalapeno, chili powder and veg. meat. First, after reading many reviews, I halved the recipe. Still a lot of food for 4 people. Changes: I cut up 13 Little Smokies, and three pieces of bacon and sauteed that with the 1/4 of an onion and 3 small celery stalks. I added the spices along with paprika, parsley and chives. Then I added a small can of mushrooms. Then I added the entire can of green chili's (no draining). Con't to saute. Then I added an entire can of garbanzo beans (I do not care for kidney beans), 1/4 can of red kidney and 1/2 can of black beans. Made my own chili spice, (can look up on the web) and added jalapeno flakes (very few) and some red pepper too. Also added 1 can of diced tomatoes and 1 small can of tomato sauce, 1/2 cup of water and a couple tbs of red wine. Thank you for sharing this recipe!!

Better than Grandma's Brownies

I will never use a mix again! These were so easy to make. They were absolutely delicious. Rich, chocolatey, moist. I am glad I used eggs from my farm so I didn't have any worries about licking the bowl, spatula, and beaters! Thank you so much for sharing this you made my family really happy!

Kris' Lentil Sausage Soup

This recipe was full of flavor, hearty, and just right for a cold wintry night! Thanks for sharing, Kris. For those who think there's not enough flavor, try using a smokier polska kielbasa -- I happened to have gotten ahold of some wedding kielbasy from www.andysdeli.com and it released a LOT of flavor into the soup. I rarely give 5 stars to any recipe, but this one is outstanding!

Fudgy Chocolate Cream Pie

This is absolutely fabulous! My husband says that this recipe is better than the one his mama made! Ssshhh!!! Don't tell her!! The only thing that worried me is that the dough was crumbly...For those who are worried about that...DON'T!!! It's the way it's supposed to be! I learned that! Thanks for a great recipe!

Baked Potato Soup

This was the best potato soup I've ever made! A couple of adjustments I made were, I thickened the base up a little more, used unpeeled, uncooked red chopped potatoes and simmered for 30-40 minutes until tender, 4 cloves garlic, and no pepper sauce. I also did not use bacon and was delicious! This will definitely be my "go to" recipe for Potato Soup.
