The Mount Rushmore State is sandwiched between North Dakota and Nebraska and is sliced in half by the Missouri River as it flows south out of Montana. South Dakota was named after the Dakota Indians of the Sioux Nation, who along with millions of bison once inhabited the Great Plains of America. In the Sioux language, the word Dakota means “allies” or “friends.” In the 1870s, gold was discovered in the Black Hills, prompting a mob of prospectors to invade the hills. Along with pick axes and mining pans, the miners brought hogs and dried beans. They got by on little more than bacon, beans, cornbread, and coffee. Later, cattle were introduced into South Dakota, along with the ring-necked pheasant (brought all the way from China). The ring-necked pheasant is South Dakota’s state bird, and a popular game bird for hunters. Many early settlers in South Dakota were of German, Scandinavian, and Irish ancestry. Kuchen (from the German word for “cake”) is the state dessert of South Dakota. Fry bread, milk, wheat, and the walleye fish are other official state foods of South Dakota.

Spinach Pomegranate Salad

I made this for Christmas last year and it was beautiful. It's easy to remove the pomigranate seeds if you place it in a dish of water and remove the seeds underwater. This prevents them from popping out on the counter and floor. The red and green presentation of this salad is very elegant.

Crunchy Green Bean Casserole

Very similar to the classic green bean casserole. I just love the addition of bacon for a little extra flavor.

Baked Potato Skins

These were easy and good. I found out after baking the potatoes that I did not have green onions which would have made these even better. I used cheese, tomatoes, bacon and sour cream. The shells were good and crispy with great taste!
