Albany, New York

Quackenbush, Rennsalaer, Van Alstine, Genessee, and Knickerbocker. Good Dutch names inherited from Albany’s early history, which began in 1609 with the explorations of Captain Henry Hudson. A commercial hub since its settlement by fur trading Dutch merchants (long before the British arrived), Albany’s economic destiny was cemented when the Erie Canal opened in 1825 linking the Hudson River with points west. As the hub of New York State’s capitol district, the town is home to politicos, lawyers, and lobbyists, as well as “regular people.” Dining options reflect the same spectrum, ranging from the Miss Albany Diner with its classic diner décor and menu, to two downtown Albany favorites: Marche, serving a fresh, sophisticated, seasonal menu, and Jack’s Oyster House, established in 1913. Successive waves of immigrants mean there’s great Greek food, Italian, and Chinese in the area, too. Follow the locals when you want hearty, made-to-order sandwiches, soups, and decadent desserts, and head for Grandma’s Country Pies and Restaurant out on Central Avenue, or Peaches Café and Bountiful Bread in Stuyvesant Plaza.

Been experimenting in the kitchen this year. Many ups and downs. I grew up 5 minutes from the Culinary Institute of America. This had no effect on my cooking ability.

These candied sweet potatoes were to DIE for! Sweet but not too sweet. Super easy to make... kids DEVOURED them! Grownups enjoyed them too! This recipe replaces my old sweet potato recipe!

Cheesy Creamed Spinach

FINALLY! A DELICIOUS CREAMED SPINACH RECEIPE!!! Very flavorful.. not at all bitter---- flavors mingled nicely... not overpowered by one flavor... kids LOVED this! I really wrung the heck out of the cooked spinach... very important! Also... I am watching my fat and only added a 1/4 cup of heavy cream... FAB-U-LOUS!

Pumpkin Maple Pie Supreme

Reviewed on Dec. 2, 2008 by Cookin' Mommy
This pie was sensational! It has a wonderfully light custard quality... ate the last piece today (six days after Thanksgiving) and it was wonderful! I mistakenly baked it at 375 degrees... and the top bubbled and carmelized adding a nice crunchy coating on the top... this will now be the only way I'll make pumpkin pie!
