About me:
Hi! I am a 25 year old blessed wife and mother to two wonderful little boys. I have been married for 4+ years and God has given me the most wonderful husband, one who has gotten used to me trying out new and crazy recipes on him! Our oldest son Christopher will be 3 on New Years Eve 2007, and our other son Jesse was born on July 6th, 2007 (yes, I just missed the 7/7/07 thing). I went to school for nursing and am taking my liscensure to become an R.N, but I am now a stay at home mom who loves to cook! ;) I also enjoy playing sports (specifically softball, cheerleading, and paintball), watching sports (specifically baseball and football...go EAGLES!!) being involved with church and the Lords work, scrapbooking, reading, being with family and friends, and a good cup of coffee any or many times of the day.

Jalapeno Popper Spread

We have made this a few times & it is always a huge hit. I don't use mayo - sour cream instead. Also, have added more peppers and used cheddar cheese - it is always great! We serve with pretzel bites & it is outstanding!

Alaskan BBQ Salmon

Added a touch of Soy sauce,cayenne and tabasco.I like the sweet and spicy stuff. Mixed some into softened butter for corn on the cob, Awesome! Great recipe.

Mom's Zucchini Bread

FANTASTIC!!! my 1st attempt at zucchini bread. The only thing I did was substitute 1 cup brown sugar for one of the cups of white, and I added the oat topping that some suggested about 20 min. into cooking time. Oh and I also used about 3 cups of zucchini (3 cups was 1 large zucchini grated, in case anyone was wondering) It was so delicious! I love that it makes 2 loaves, because I can give one away to a neighbor and it really blesses them! A great way to use up the abundance of summer zucchini. Grate it all up, and freeze what you don't use so you can make this bread any time of the year. Thanks for the post! I may try adding chocolate chips sometime for fun.
