Zippy Chicken Corn Chowder

This was a great starter recipe for what turned out to be an awesome chicken corn chowder! I did not use leeks. Instead I used 1 large onion and 3 cloves garlic. I added cayenne pepper and a jar of salsa to spice it up. This was great re-heated in the microwave for work lunch! Enjoy.

Double Tomato Bruschetta

This was delicious! I have made this twice now and each time it has been a hit! So easy to make and I usually have everything on hand...especially in the summer when the herbs and tomatoes are plentiful.

Ribbon Salad

This came out awesome! It did take a long time to make but was worth the effort. I made it red white and blue for the 4th of July. I waited close to an hour between each layer and by the time it was getting close to being done the gelatin was starting to setup in the pitchers. I just gently re-warmed for a minute or two until it was liquefied again and it worked out perfectly. I'm excited to try it again with different colors!

Focaccia Bread

This was very good. I made as directed except I left off the mozzarella cheese and added fresh chopped rosemary from my garden and a sprinkle of Kosher salt. The inside was nice and fluffy. We dipped it in olive oil and balsamic vinegar

Best Ever Pie Crust

I know I am in the minority here but I would say this was the worst pie crust I have ever made. The dough was very difficult to work with and I ended up patching and patting it into the pie plate. I won't be making this again.
