Spinach Pie

As usual I wish I had read the previous reviews prior to cooking. I halved the spinach and used a variety of seasoning from my spice cabinet as my only alterations to the recipe. In the future I would also halve the bread crumbs and add an egg or two.

Easy Mashed Potato and Roasted Vegetable Enchiladas

Accidentally forgot the zucchini but the dish came out yummy. I used Garlic Seasoned Mashed Potato Flakes as an addition.

African Peanut Soup

The soup was alright. But I thought it needed more peanut butter. My leftovers tonight will have some added peanuts.
