INGREDIENTS
6 cups torn lettuce leaves
8 ounces hard salami, julienned
6 ounces provolone cheese, julienned
1 cup shredded mozzarella cheese
2 medium tomatoes, chopped
1 (6 ounce) can pitted ripe olives , drained, halved
1 tablespoon minced chives
1 (8 ounce) can tomato sauce
1/2 cup vegetable oil
1/4 cup red wine vinegar or cider vinegar
1 teaspoon sugar
1 teaspoon salt
1 teaspoon dried oregano
1/2 teaspoon garlic powder
1/4 teaspoon pepper

DIRECTIONS
Place the lettuce on a large serving platter. Arrange the salami, cheeses, tomatoes and olives over top. Sprinkle with chives. In a blender, combine the remaining ingredients; cover and process until smooth. Drizzle over salad.

DELICIOUS! I didn't know if I'd care for the dressing, but it was so good. It went perfectly went the antipasto ingredients. I ended up switching the lettuce for pasta since I was taking it for a salad-themed party and nobody else was bringing a pasta salad; plus I just thought it sounded good to include pasta. I also added zucchini and artichoke hearts out of personal preference. I'll definitely be making this again. Also, to blend the dressing so that the oil stays mixed in: Stir together all the ingredients except the oil, then add a few drops at a time to the tomato sauce mixture, working up to a slow drizzle while you constantly stir, until all the oil is added. Your dressing will stay blended and not create a greasy surface on the pasta.

This salad is excellent, but the dressing is to die for!! Made this for a neighborhood/ladies gathering and it was well liked by all- especially the dressing!! Thanks for the recipe!

Delicious! I served this at a large family gathering and everybody loved it. Like several of the previous reviews, I was hesitant about trying the dressing included with the recipe, but it definitely makes the salad! This is a keeper for sure.

I used pasta instead of lettuce as suggested by another reviewer as I was taking this to a potluck and they needed a pasta salad. I used swiss cheese instead of provolone and halved grape tomatoes instead of chopped whole tomatoes. I also added chopped artichoke hearts and marinated mushrooms. The dressing was very good but the salad was just okay. There were a lot of leftovers. Perhaps it would be better with the lettuce, I'll try it that way next time.

This is wonderful salad. We had a Soprano's night and this is what I brought. It all was very tasty. The dressing was nice. I used a whole piece of mozzarella that I chopped up, instead of, shredded. And, next time, I would add peppercini peppers and artichoke hearts, but nothing needs to be changed. Great recipe. Looks gorgeous as well.
