Bruschetta II

INGREDIENTS

  • 10 slices Italian bread
  • 2 1/2 teaspoons olive oil
  • 4 vine-ripened tomatoes
  • 1 teaspoon chopped fresh basil

DIRECTIONS

  1. Preheat broiler.
  2. Cover a medium sized baking sheet with a single layer of bread slices. Brush the slices with olive oil.
  3. Dice the tomatoes. In a mixing bowl, combine the tomatoes, olive oil and basil. Mix for two minutes.
  4. Place bread under broiler until lightly browned. Remove from broiler and top with the tomato mixture.

There is not much too this recipe, and I thought it was very bland. I didn't care for it at all. My husband seemed to think it was okay. I do not recommend this recipe. Sorry.

Excellent! I sprinkled some mozzerela cheese on top on grilled them on the BBQ! Delicious!

I thought it was pretty bland, so the next time, i doubled the basil, chopped up 2 garlic cloves and added it to the tomato mixture, then finished it off with some shredded mozzarella on top. It got a much better reception from my husband the second time.
